cauliflower fried rice
2 tbsp butter
1/2 onion, chopped
1 package riced frozen cauliflower (trader joes)
1 cup frozen peas, carrots and corn mix
1/3 tsp toasted sesame oil
1 tbsp soy sauce
2 eggs, scrambled
salt + pepper to taste
In a skillet or frying pan, melt butter over medium to medium-high heat.
Add chopped onion and cook, stirring occasionally until almost clear.
Add frozen peas, carrots and corn, and frozen cauliflower “rice”.
Cover until thawed and heat until water is cooked off.
Add soy sauce, sesame oil, salt and pepper.
Push mixture to side of pan & lightly coat exposed part of pan with butter.
Pour scrambled eggs in and stir lightly, keeping them fluffy.
Fold in together.
Top with sesame seeds (& siracha!)
I also like to top it with fresh avocado, mango and pineapple!
